Right. "A sense of place." I know, I know, every wine person says that, right before they start banging on about limestone like it's ever going to help you pick a bottle.
But hang on, because this bit’s actually true: good wine tastes like it came from some-where. Real sun. Real dirt. Someone out there, actually caring, pouring their soul into every bottle. Maybe swearing a little while they did it. These are wines with a backstory, basically.

Not a fake one invented by a marketing team the week before a launch. But here's the thing nobody tells you: none of this means you should treat them like a museum piece. Open them, drink them too young, share the last glass with someone who doesn't "get" wine yet, keep one bottle for a birthday that hasn't happened. All of that's fine. Save a bottle for later if you want, or don't – nobody's checking. Same goes for what's in the glass when there's no alcohol in it.

We're just as picky there — real ferments, real ingredients, someone who actually cared how it turned out. Not a consolation prize. Just another way in. The only house rule: nobody messed with it more than they had to. No lab tricks, no over-engineering the soul out of it. Just someone paying attention from the soil to the glass and then – hardest part of the whole job – got out of the way and let it be what it was going to be anyway.
